Atlantic halibut for wholesale buyers

Hippoglossus hippoglossus

Norwegian Atlantic halibut (Hippoglossus hippoglossus) is a large flatfish used by seafood importers, wholesalers, fishmongers and foodservice businesses. Identifying the species is important: Atlantic halibut is different from Greenland halibut (Reinhardtius hippoglossoides), which is traded under a similar common name. Our listed product is Atlantic halibut from Norway, farmed in Norwegian aquaculture — in sea pens and in land-based facilities.

We source our halibut directly from Norwegian producers approved by Mattilsynet, the Norwegian Food Safety Authority, and coordinate the export side and direct delivery. Farming, preparation and packing take place with the producer. This gives international buyers one commercial contact while keeping the product connected to its Norwegian source.

Farmed Atlantic halibut

Atlantic halibut is farmed in two ways along the Norwegian coast: in circular sea pens placed in the fjords, and in land-based facilities on shore. In both systems the cycle begins in the hatchery, where the eggs are hatched and the larvae are raised until they are weaned onto feed. The juveniles are then moved into larger rearing tanks or pens, where they continue to grow.

Both systems depend on cold, clean seawater. The pens are sited where currents keep the water fresh, while land-based facilities pump seawater from the coast and follow water flow, oxygen and temperature continuously. The fish are graded by size as they develop, so each group is fed and handled at the same stage, and harvest is planned with the producer when a group reaches the size the buyer has asked for.

Growth and quality in the farm

As young halibut grow, feeding is adapted to their size and stage of development. Water quality, oxygen and temperature are important for their wellbeing and steady growth, both in land-based facilities and in sea pens.

The producer follows the fish throughout the grow-out period, with attention to their health, feeding and condition. Careful husbandry during this stage helps lay the foundation for the firm flesh and consistent quality of the finished product.

A long Norwegian halibut tradition

Halibut has been fished and farmed along the Norwegian coast for generations, and today our halibut for the market comes from both sea pens and land-based farms.

This farming continues the Norwegian halibut tradition with a controlled, traceable production, delivering fish of consistent quality to buyers around the world.

Finished product and quality

Norwegian Atlantic halibut has firm, white flesh with a mild, delicate flavour. Gentle cooking brings out its natural taste and gives a moist, tender result, with flakes that hold their shape on the plate. It suits steaming, poaching and oven baking, as well as pan-frying for a lightly golden surface.

Halibut pairs well with butter or lemon sauces, fresh herbs and seasonal vegetables such as asparagus, peas and fennel. Potatoes, rice or grains make balanced accompaniments, while a smooth vegetable purée complements the fish’s firm texture. These combinations suit both simple fish dishes and composed restaurant plates.
