One species.
A seasonal journey.
Atlantic cod (Gadus morhua) is a whitefish with a mild flavour and flesh that separates into flakes when cooked. Normar Seafood sources its wild-caught cod from Lofoten in northern Norway.
Skrei is not a separate species. It is mature Northeast Arctic cod that migrates from the Barents Sea to the Norwegian coast to spawn in winter. Lofoten is one of the traditional centres of this seasonal fishery. Fresh skrei is seasonal, while cod availability depends on the fishery and the required fresh or frozen format.
Normar sources directly from approved Norwegian suppliers. Catch handling, processing and packing are carried out by the fishing vessels and producers — not by Normar. Documentation available on request.
From the fishing grounds to the finished product
The production process

Catch & handling
Care begins on board.
Cod is caught using different fishing methods, including lines and nets. The method used depends on the vessel, season and fishing grounds. Once brought aboard, the fish is handled carefully to limit bruising and damage to the flesh.
Prompt bleeding and chilling are important steps in preserving the fish's appearance and quality. The vessel's handling routines and time to landing influence the raw material that reaches the producer.

Chilling & landing
Keep the catch cold.
The fish is gutted, washed and chilled as part of the handling chain, with the exact sequence depending on the vessel and the intended product. Ice or other suitable chilling systems help maintain a low temperature until landing.
At the receiving producer, the catch is checked and sorted by size and quality. Catch and batch information support traceability through the following preparation and packing stages.

Preparation & packing
Prepared to the specification.
Depending on the order, the producer supplies whole gutted fish or prepares further cuts, such as fillets and portions. Heading, filleting, trimming and bone removal are defined by the agreed product specification.
Fresh fish is packed with suitable chilling, while frozen products are frozen and kept in the frozen cold chain. Format, size, packing and availability are confirmed before quotation. Normar coordinates the order and delivery directly from the Norwegian producer.

Lofoten / Northern Norway
A coast shaped
by cod fishing.
For centuries, the winter arrival of skrei has drawn fishing boats to Lofoten. The fishery helped shape coastal communities, seasonal work and trade along the Norwegian coast.
Air-drying cod as stockfish made it possible to preserve the catch and trade it over long distances. Lofoten's fishing villages became part of a wider trade that linked northern Norway with Bergen and markets abroad.
Our wild-caught cod comes from Lofoten. Today, that origin sits alongside modern chilling, preparation and traceability at approved Norwegian suppliers, with the product format and documentation agreed for each order.
