Salmon fillet

Norwegian Atlantic salmon. Quality shaped at sea, preserved through careful processing.

From cold waters.
To carefully prepared fillets.

Our salmon fillets come from farmed Atlantic salmon (Salmo salar) raised along the Norwegian coast. All salmon fillets supplied by Normar Seafood are classified Superior, with C-trim and E-trim formats available fresh or frozen.

The cold coastal waters and flowing sea currents provide suitable conditions for salmon farming. The finished fillet also reflects the fish's health, feed and husbandry — and how carefully it is harvested, chilled and processed.

Normar Seafood sources directly from approved Norwegian suppliers. Harvesting, filleting, trimming and packing are carried out by the producers, not by Normar. Documentation available on request.

Harvesting, chilling & filleting

Care begins before the first cut.

Gentle handling before slaughter helps limit stress, which can affect muscle condition and the onset of rigor mortis. Effective bleeding, hygienic gutting and prompt chilling are important steps in preserving the raw material's appearance and freshness.

The prepared salmon moves to the filleting line, where the backbone is separated from the two sides. Processing equipment and handling routines are designed to avoid unnecessary pressure and damage to the flesh.

Timing matters: processing fish while it is stiff in rigor can damage the fillet. Producers plan filleting around the fish's condition; pre-rigor processing takes place before this stiffness develops.

Trimming & preparation

Prepared to the agreed trim.

After filleting, the sides are trimmed to the required specification. This stage determines which bones, fins, belly sections and skin remain, with equipment and manual checks used to prepare an even, usable fillet.

Our C-trim fillets are skin-on, with back, belly, collarbone and pin bones removed. E-trim fillets are skinless and fully trimmed; a pre-rigor format is available. The exact trim and processing requirements are confirmed before quotation.

Careful handling helps protect the muscle structure and limit gaping — the separation that can occur between the segments of the fillet.

Cutting, checking & packing

Finished for the intended use.

Fillets can remain as whole sides or be cut further for the required format. At the producer, checks on appearance, trim and weight help ensure the product matches the agreed specification before packing.

Hygiene and temperature control remain important throughout. Prompt chilling and a maintained cold chain slow bacterial growth and help preserve freshness; frozen products require controlled freezing and frozen storage.

Normar coordinates the specification and direct delivery from the Norwegian producer. Size, trim, fresh or frozen format, packing and availability are confirmed for each enquiry.

The finished product / Classified Superior

What lies behind
the quality?

It starts with the environment. Norway's cold, flowing coastal waters provide the setting in which the salmon grows. Water temperature, oxygen conditions, fish health and balanced feed all contribute to the raw material. Farmed salmon receive formulated feed: the sea's natural richness alone does not determine fillet quality.

After slaughter, the priority is to preserve that quality. Limiting stress before harvest, effective bleeding, hygienic processing and prompt chilling help protect appearance and freshness. Filleting at the right stage and handling the flesh gently help retain its structure.

Colour, firmness and an intact fillet are the result of several factors working together — not cold water alone. A maintained cold chain continues that care through packing and transport. Our salmon fillets are classified Superior, with product specifications and documentation available on request.
